But these paleo coconut pancakes will do just the trick. They’re perfect for anyone with a gluten or lactose intolerance, plus they pack a ton of protein and have a coconut flavor. What’s not to love?
Flax meal, eggs, and coconut flour work together in this recipe to create a protein-filled meal. The flax meal (or ground flax seeds) is filled with fiber and healthy fats, while remaining low-carb. Eggs add protein and vitamin D to the pancakes and coconut flour acts as a gluten-free alternative to white flour. In fact, coconut flour contains fiber, protein, and healthy fats.
To make this recipe, combine coconut flour, coconut, flax, baking powder and salt. Also combine eggs, coconut oil, almond milk, maple syrup, and vanilla in another bowl and whisk together. Combine the two mixtures, and you’re ready to starting cooking. If your mixture is too thick to spread, add a little almond milk and stir, repeating until the batter is the correct consistency. Brush your skillet with coconut oil and add the batter, letting it cook until the top bubbles and then flipping over. Can’t get enough of coconut? Top your stack of pancakes with a sprinkle of shredded coconut and you’re ready to dig in.
